LIMBO is a true passion project focused on experimental roasting and blending + artistic expression. We value continuous exploration, following curiosity, and internal/external peace.
For beans, our roasting philosophy is varied and learning-based. We roast the full spectrum, from very light to very dark; although we favor the lighter end of the scale to potentiate the natural flavors and aromas of the crop.
If you are a repeat customer, you may have noticed that the coffee packaging evolves slightly along with each new roast batch. Each bag of beans has a changing monthly poem - a time stamp - as it were, in the LIMBO journey.
Currently, LIMBO coffee is available only at one stockist: Grayson's Rustic Bakery located at 1672 Kingston Rd. Please stop by the bakery and take a look at the shelf.
We source most of our coffee beans from green bean suppliers for home roasters and micro-roasters, such as Single Origin Coffee.
What is available on offer depends on the season and conditions. We buy and roast small amounts at a time so what is on the LIMBO shelf changes month to month, week to week.
LIMBO coffee beans are packed in sealed coffee bags with one way valves. Nevertheless, as with other food items, coffee beans will stale with time and as they are exposed to light, moisture, and heat.
LIMBO labels are printed on thermal paper. As the label gradually fades, think of it as a gentle nudge that it may be time to brew the beans. LIMBO is a mediation on beginnings, ends, and our time on this earth. LIMBO labels are thoughtfully designed with the knowledge that all things fade and transform - whether that be memories, states of being, or the flavor of coffee beans.
The best we can do is recognize the transcience of things, and be as present as we can in this moment. May the aroma of diverse beans, the ritual of the brew, the view out that window, and that first, almost-too-hot sip give you aid.
Single serve pourover pouches present a convenient way to brew filter coffee on the go. This style of "hanging ear" drip coffee bag is popular in Asia, in particular Japan and Taiwan.
To brew, start by tearing the pouch open at the dotted "open here" line. Open the white "arms" on the side of the pouch and hang them over a mug or cup.
Pour hot water over the coffee grounds slowly, letting the grounds bloom for 30 seconds or so after the first pour. Continue pouring water as you would a pour-over to finish brewing. Each coffee pouch has roughly 10-12g of ground beans and requires 180-220g of hot water.
The ideal water temperature is around 94 degrees celsius. If you do not have a thermometer, use water that is just before boiling.
